Shincha. Freshly harvested sencha leaves. A spring harvest tea and available for a limited time in the spring and early summer.
After harvesting sencha and gyokuro leaves are rolled, dried naturally, packed into large square blocks and wrapped in foil. They are then carefully placed in wooden boxes and stored in a refrigerated room at a temperature of 1 degree centigrade. Humidity is strictly controlled. Gyokuro leaves are aged to give them a mellow, slightly sweet taste.
Teas stored in this manner remain remarkably fresh for a year or more. This storage method is the standard procedure for producers of high quality gourmet green teas.
Teas are removed from this room, bagged, and sent to us daily. An expiration date is on each bag you purchase.
No merchant who receives bagged teas from overseas and stores them until making a sale can match us in terms of freshness. That is why it is important to order teas shipped directly from the source. Sencha is harvested two to three times a year. Gyokuro is usually harvested twice a year.
There is a tremendous difference in quality between teas from the first harvest and all the rest. Japanese Green Tea Online only ships first-harvest teas. First-harvest teas not only taste better they also contain more polyphenols and vitamins than second and third harvest teas.
Japanese and Chinese green teas both come from the same Camellia sinensis tea plant which is native to Asia.
The main difference is the way the leaves are processed. Chinese harvesters pan fry the leaves in a large wok. Japanese green teas are steamed, dried naturally, and then rolled into various shapes until they are completely dry. This is an efficient method for preventing the oxidation of flavonoids and polyphenols that gives Japanese green tea its flavor and health-enhancing properties.
An ordinary teapot will suffice as long as it is used exclusively for brewing green tea. A Japanese teapot has a wire mesh screen that has been engineered for efficient tea infusion. It is also aesthetically pleasing to pour green tea from a Japanese teapot.
